#2. Croûte au Fromage. (The Seven Best Things I Ate on the Haute Route)

2. Croûte au Fromage in Gasenreid, Switzerland. The dish is simple; bread covered with a generous portion of melted cheese, wonderfully crispy on the edges, topped with your choice of ham, onion, and/or a fried egg. In this dish, all my savory cheese dreams come true. It's like raclette and a croque madame had beautiful, beautiful children.

This friendly, family-run restaurant is situated partway up the mountainside with views of the peaks above and the valley below. Sit on the back patio and contemplate your final two days of hiking to Zermatt while enjoying a piece of their famous blueberry cake for dessert. It's delicious. And besides, with the challenging Europaweg ahead of you, you'll need every calorie.
